
Quality of common wheat: tools for the enhancement and growth.
The general objective of the plan is to develop technical and agronomic tools aimed at enhancing and increasing the quality of the production of common wheat subject to the first transformation (milling). For this reason we propose an action (3.1) to set up quick analyses (NIR) of the quality characteristics of the product (which will determine subsequent checks on flours) starting from the contribution phase, and an action (3.2) of varietal comparison on farm to guide the agricultural producer in the choice of productive varieties that are appreciated for transformation.
In storage, the determination of the technological and qualitative characteristics of the grain is carried out through numerous laboratory analyses that require suitable tools, long execution times and qualified staff. On the other hand, it is essential for the storage operators to have suitable tools to have the qualitative classification done quickly, even by unskilled personnel. Some of these parameters (humidity, proteins, etc.) can be easily determined by means of NIR (near-infrared reflectance spectroscopy) tools which satisfy the requirement of decision-making immediacy required at the time of the grain consignment by operating on the grain as it is (not ground). Other parameters are determined with poor or no precision, so the main objective of this plan is the development of calibration curves on NIR instruments for the main qualitative and technological parameters of the common wheat grain. The final goal is to speed up and increase the analysis of the incoming product and to have a characterisation and segregation of the product that best meets the company’s technical and commercial needs.
The aim of the varietal tests is to keep the variety choice available to the agricultural producer updated, with the dual purpose of seeking, in combination with an adequate cultivation technique and according to the soil and climatic characteristics of the territory, an increase in production yields and a more defined and stable quality with respect to market needs (first and second transformation).
As for action 3.1, the results expected in the first year of project execution are a first calibration with a good degree of reliability of the calibration curves for the values of toughness (P), extensibility (L), strength (W), time of dough, stability, fall. In the second year, with a further set of analyses, the final calibration will be obtained.
As regards statistical processing, in the second year there will be reliable information on the predictive capacity obtained with standard methods and with the use of artificial neural networks. As regards action 3.2, a database of morphological and phytopathological data and of productive and qualitative characterisation of the varieties of common wheat observed will be available. These data will be used for the formulation of descriptive sheets of the varieties.

The progettuale hypothesis previews the realization of a center of storage for grain constituted from metallic silos (17 in order to distinguish consignments by their characteristics) built on an open area, close to the headquarters of the MOLINI INDUSTRIALI, as well as the construction of a grain transfer pit and related grain transport facilities, located in the existing business area.
Such storage is strictly functional to the production of flour for human consumption, and is not separable from the grinding process that takes place in the adjacent area of sedime.

The realization of this project achieves several objectives:
- It results in a benefit for the community as it favors the growth of the profitability of local agricultural enterprises.
- It allows Molini Industriali to increase the share of processed products exclusively with local raw materials; the advantage is not only for the company, but for the entire supply chain.
- It allows to respond positively to the need of local farmers to be able to use a storage center located in the immediate vicinity of their farms, and to the same logistic requirements of the company which is now obliged to bring the product to the Rubiera plant for storage.
It has positive effects from the occupational point of view, that they could be realized in 2 ulterior assumptions when the structure will become functional at full strength.
